Chaleur B is a chocolate manufacturer based in Carleton-sur-Mer, Quebec, that we love. Their milk chocolate 51% won the prize for the world's best milk chocolate at the International Chocolate Award in 2023. This milk chocolate has the particularity of having a high percentage of cocoa. A real delight!
The Paris-Brest is filled with a chou in which is a generous portion of homemade hazelnut praline. Absolutely decadent!

Storage
Paris-Brest is best eaten the same day, for a crispier choux pastry. Keep refrigerated. Temper for 5-10 minutes before serving. Keeps for 3 days.
